Homemade Vanilla Cream Puffs (Cream-Filled Choux Pastry)

These golden, fluffy cream puffs are made with light choux pastry and filled with a rich vanilla pastry cream. The crispy exterior and silky smooth filling make them an irresistible bakery-style dessert that is surprisingly easy to prepare at home.

Ingredients

For the Choux Pastry

1 cup (240 ml) water

1/2 cup (115 g) unsalted butter

1/4 teaspoon salt

1 cup (125 g) all-purpose flour

4 large eggs

For the Vanilla Pastry Cream

2 cups (480 ml) whole milk

1/2 cup (100 g) granulated sugar

4 egg yolks

1/4 cup (30 g) cornstarch

2 teaspoons vanilla extract

2 tablespoons unsalted butter

For Garnish

Powdered sugar for dusting

Instructions

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a medium saucepan, combine the water, butter, and salt. Bring the mixture to a boil over medium heat.

Once boiling, add the flour all at once. Stir vigorously with a wooden spoon until the mixture forms a smooth ball and pulls away from the sides of the pan. Continue cooking for another minute to remove excess moisture.

Transfer the dough to a mixing bowl and let it cool for about 5 minutes.

Add the eggs one at a time, beating well after each addition. The dough will look separated at first but will become smooth, shiny, and thick.

Transfer the dough to a piping bag fitted with a large round tip. Pipe mounds about 2 inches wide onto the prepared baking sheet, leaving space between each puff.

Bake for 25 to 30 minutes until the puffs are golden brown and crisp. Do not open the oven door during baking.

Remove from the oven and allow them to cool completely on a wire rack.

To make the pastry cream, heat the milk in a saucepan until steaming but not boiling.

In a separate bowl, whisk together the sugar, egg yolks, and cornstarch until smooth and creamy.

Gradually pour the warm milk into the egg mixture while whisking constantly.

Return the mixture to the saucepan and cook over medium heat, stirring continuously until thickened.

Remove from the heat and stir in the vanilla extract and butter until smooth.

Transfer the pastry cream to a bowl and cover the surface directly with plastic wrap. Refrigerate until completely chilled.

Using a small knife, make a slit in the side of each cream puff or cut off the tops.

Fill a piping bag with the chilled pastry cream and pipe the filling into each puff until full.

Dust generously with powdered sugar before serving.

Tips for Perfect Cream Puffs

Use room-temperature eggs for a smoother dough.

Bake until deeply golden to prevent the puffs from collapsing.

Allow the pastry shells to cool completely before filling.

Chill the pastry cream thoroughly for the best texture.

Fill the cream puffs shortly before serving to keep the shells crisp.

Storage

Store filled cream puffs in an airtight container in the refrigerator for up to 2 days. Unfilled shells can be frozen for up to 1 month and refreshed in a warm oven before filling.
